Chicken Parmesan with Herbed Tomatoes

It's time once again for a delicious chicken recipe, chicken is a staple in many peoples diets and in my family it was a regular meal every Sunday as we would all sit down at the dinner table together to eat. As I have gotten older I decided to continue the tradition of weekly chicken meals but became flexible on the dates that I would eat it. This recipe is so tasty and the chicken moist that you will enjoy the distinct flavours added from the spices, the herbed tomatoes is a healthy touch and for those that want more of a filling, you can always add a bit of rice to your plate. The chicken and tomatoes can be cooked at the same time in the oven and if your baking sheet is big enough you can always cook them both together. I like to use large plum tomatoes, I find that they slice the best compared to other tomatoes and I enjoy their taste whether raw or baked but if you don't have any at home just about any large tomato will work fine. The brown sugar can also be substituted by white sugar if you do not enjoy the taste of molasses.

Chicken Parmesan with Herbed Tomatoes Recipe
Prep Time: 10 minutes  Cook Time: 15 minutes  Servings: 4 


Ingredients
2 eggs, whisked
4 chicken breasts halves, skinless
1/3 cup of dried bread crumbs
1/4 cup of parmesan cheese, grated
1/4 tsp of sea salt
1/4 tsp of garlic powder
4 tsp of olive oil
2 large tomatoes, sliced (6 slices each)
1 tsp of brown sugar
1 tsp of dried oregano
1 tsp of dried marjoram
1 tsp of onion powder

Preparing Chicken Parmesan with Herbed Tomatoes
 
1- Preheat oven to 400F.
2- Whish eggs in a bowl, on a plate combine bread crumbs, parmesan, salt and garlic powder, set aside 1 tbsp of crumb mixture.
3- Dip chicken into egg mixture, then into crumb mixture, place chicken on baking sheet, drizzle with oil.
4- Arrange tomatoes into a single layer on another baking sheet or large casserole dish, sprinkle with sugar, oregano, marjoram, onion powder and reserved bread crumbs.
5- Place chicken and tomatoes in oven and bake for 14 minutes.
6- Enjoy !!!
