The holidays are fast approaching once again and for many of us we have parties, pot lucks and family gatherings. The best part of all of these is the food, the variety of the food selection is enough to put on a few pounds just looking at all the options. The one thing I have always noticed is the lack of a good side and what better side to add to the selection then a baked potato. I have never been a big fan of sour cream but salsa well that is a different story so I decided to create a side of the popular baked potato dish and salsa. Your potato will end up the talk of the party. The potatoes of choice for baking should always be russet, it is the option that I feel is the best for baking this type of dish. The salsa should be thick and chunky and I chose to pick the medium flavour but you can go hot or mild. A baking dish works best for cooking and you will not need many ingredients, unless your thing is to have the toppings falling off the potato.

Baked Potato with Salsa Recipe
Prep Time: 15 minutes  Cook Time: 90 minutes  Servings:  4

Ingredients
 2 russet potatoes
2 tbsp of butter
2 cups of thick and chunky salsa, medium
2 tbsp of olive oil
1 cup of shredded cheddar cheese
1 green onion, chopped

How to make Baked Potato with Salsa
1- Preheat oven to 400F
2- Wash potato under cold water, removing any eyes and dark spots and pat dry.
3- Rub potatoes with olive oil and pierce with fork several times, wrap in foil.
4- Bake for 85 minutes and then let potato stand 10 minutes before unwrapping foil.
5- Slice/cut potato lengthwise from top to bottom.
6- Spread butter on all halves, followed by salsa, then sprinkle cheese and green onion.
7- Place bake in oven and broil for 5 minutes on low
8- Enjoy !!!
